A century-old brand is well known.

Jiujiang double steamed wine was founded in the early years of Daoguang in Qing Dynasty, and has a history of nearly 200 years. Jiujiang is one of the famous ancient towns in Guangdong Province. It was once prosperous in modern history, and the name of "Little Guangzhou" was well known. Jiujiang's wine is very famous. As the saying goes, "you don't need apricot yellow to attract guests." Jiujiang has been a wine town since ancient times. " At that time, Jiujiang wine industry was developed, with many restaurants and fragrant wine all over the lane.

Jiujiang is a famous wine town in Qing Dynasty. According to the Records of Jiujiang Town, the brewing industry in Jiujiang Town was unprecedentedly prosperous at that time, reaching the prosperity of restaurants in lanes and hotels on the streets. During the light years of the Qing Dynasty (1821-1850), the wine industry in Jiujiang Town was developed, and the wine brewed by "Youlongxing Winery" was the best, and its popularity was greatly improved. Its wine is made by twice fermentation and steaming. Zeng Shu, a poet in the Qing Dynasty, tasted "Jiujiang Double Steamed Wine", and his poems were prosperous, and he wrote a famous sentence of "Hanging a net in leisure, celebrating double steaming and drunkenness in the moon". Mr. Kang Youwei's teacher, Mr. Zhu Jiujiang, a Jiujiang scholar, has a special liking for wine in his hometown, praising him as "a guest who delights in scholars' fine wine and helps my thatched cottage make money". 1952, represented by Yong Dexing, 12 brewing workshops including Linong, Dade and Gong Yuan formed the "Jiujiang Wine Joint Venture", which gradually developed into today's Jiujiang Winery.

Jiujiang double steamed wine has a long history of domestic sales and export. Jiujiang double steamed wine, where there are Chinese people. Jiujiang double steamed wine is called hometown water and hometown wine by foreign users, which fully reflects consumers' recognition and love for the quality of Jiujiang double steamed wine. Jiujiang winery is also an old Chinese brand, which has been fully affirmed by drinkers.

Unique craftsmanship has been passed down from generation to generation.

Jiujiang double steamed wine can be circulated for a long time with its own unique name, instead of Guangdong yellow rice wine, because of its unique technology. A more reliable legend is that Youlongxing Winery was also a family workshop at that time, and the husband and wife were doing business. When his wife was holding a bottle of freshly steamed wine in the workshop and preparing to move away, she accidentally poured the whole bottle of wine into a barrel of fermented wine because the ground was wet. No way, we can only distill this barrel of wine and wine together, and use twice the materials to distill a quantity of wine twice. It is this carelessness that creates the myth of Cantonese wine. For a long time, due to the reasons of equipment and technology, it is difficult to improve the degree of Guangdong wine by single distillation, and the shortcomings of insufficient aroma have been solved perfectly at once. It turns out that this seemingly cost-increasing practice can greatly improve the average alcohol content, concentrate twice the aroma substances together, and make the wine quality much higher than other rice wine. It is also for this reason that the business of Youlong Bank is booming.

Over the past two centuries, through the hard work and wisdom of several generations of Jiujiang ancestors, Jiujiang double steamed wine has gradually formed a unique brewing technology. It is made by secret koji, twice distillation, cooked meat and pottery aging. It has a unique style of "jade is clean and ice is clear, black beans taste pure, mellow, smooth and sweet, and the aftertaste is sweet". Jiujiang double-steaming brewing technology has been selected into the list of "provincial intangible cultural heritage", which has laid its precious historical, scientific, humanistic, folk-custom, economic and social values.

Unique and outstanding.

The traditional brewing technology of Jiujiang double-steamed wine was bred and formed under the unique ecological environment and humanistic conditions in Jiujiang, South China Sea, with distinctive regional cultural characteristics. Thanks to the unique local climate, clear water quality and unique brewing technology along the Xijiang River, Jiujiang people brew high-quality rice wine suitable for drinking in Lingnan climate. Jiujiang enjoys superior geographical conditions and convenient land and water transportation. Located in the west of Nanhai District, Foshan City, where Nanhai, Shunde, Gaoming, Heshan and Xinhui meet. Xijiang River and Beijiang River flow through it, and there are many waters and Shenzhen, with land transportation extending in all directions.

Xijiang River is the main water source of Jiujiang. Xijiang River flows through Guangxi and western Guangdong, with pure water quality, and water pollution is the lightest among several tributaries of the Pearl River system. In recent years, Guangzhou has invested heavily in drinking water improvement projects, that is, introducing Xijiang River to replace the original water source. Jiujiang Winery is located in the inner side of Xijiang bend, which is called "Jiujiang bend". The advantage of taking water there is that it contains the least water impurities and sediments. Therefore, the water treatment of Jiujiang Distillery can minimize the use of chemical treatment agents and chemical consumption agents. This not only provides a suitable growth environment for microbial fermentation, but also preserves trace elements from river water, which is of great benefit to the normal activities of microorganisms in koji-making and fermentation and helps to form flavor substances.

Xijiang River has a wide channel and abundant water all the year round. Dayan Moutain and Xiqiao Mountain are on both sides of the Xijiang River, forming a certain range of local climate. The temperature difference along the river is small, the temperature along the river is lower than inland in summer and higher than inland in winter. The southeast monsoon brought a mild, humid and warm climate to this area, and provided a good microbial ecological environment for Jiujiang Distillery near the river bank. The suitable local climate, coupled with decades of accumulation, makes the beneficial microorganisms in the factory environment of Jiujiang Distillery more and more abundant, forming a rare brewing environment, which is conducive to the emergence of the unique style of liquor. The microbial ecological environment of Jiujiang Distillery is the most unique among the many enterprises that have been investigated at present.

South Vietnamese culture is thriving.

Wine is closely related to geography and regional culture. Jiujiang Zheng Shuang is rooted in southern Guangdong, which is related to the food, art and culture of Guangdong and Hong Kong. For example, there are "Jiujiang Double Steaming" in Cantonese cuisine, Cantonese opera, poetry and customs, which proves that Jiujiang Double Steaming is closely related to South Guangdong culture. With its uninterrupted domestic sales and exports, it has established a cultural influence that spans time and space.

The comedy script "Chen" is a scene about Chen Hefang's wedding night. There is such a line: "Please invite my aunt to drink a cup of double steamed Jiujiang with her left hand and wish her a prosperous career." Chen was a great master in the late Ming Dynasty and a chivalrous man who devoted himself to fighting against injustice. His fame spread to thousands of families and was deeply rooted in people's hearts. It is in line with the historical reality at that time to let Chen drink a cup of Jiujiang double steaming. In addition, from this application, we can see that Jiujiang Double Steaming has been endowed with a beautiful symbol among the people and used as a greeting on auspicious days. This can be regarded as a rich brand cultural asset.

According to Nanhai County Records, from the late Qing Dynasty to the Republic of China, Youlongxing, a famous winery in Jiujiang, was most famous for its double steamed wine in Liangxiang. In the 1920s and 1930s, there was a very popular Cantonese opera (from the Cantonese opera "Love Story of Master Qi" starring Xian Nvhong), which described a person's helplessness due to his age. It's called "Cross Song": "You can't get him after one night's hard work, two wives can't get him, three bowls of rice can't get him, and a four-story building can't get him. You wake up at five o'clock and leave without training. It shows that Jiujiang double steaming has become a popular rice wine in Guangdong, Hong Kong and Macao.
