What's the difference between Daqu and Laojiao?

The fermentation tools of Daqu and Laojiao are different.

Daqu liquor is called Daqu, in which conidia of Aspergillus are transplanted into strongly cooked white rice, and hyphae flourish on rice grains after heat preservation. Under the strong action of amylase and glucoamylase produced by Aspergillus, the starch in rice was enzymatically decomposed into sugar, forming Luzhou-flavor Daqu, Qing Xiang Daqu and other fragrant liquors.

Old cellar refers to the cellar age of more than 30 years. "Pit pool" is generally made of unique yellow mud, spring water or well water. After 7 to 8 months of use, the yellow mud will turn from yellow to black. In about two years, it will become black and white, from soft to brittle and hard. The solid fermented wine produced in this pit has high trace components, rich taste and excellent quality, and is called Laojiao wine.
