Benedict's egg

Exercise:

1.？ Turn the fire to medium-high fire, melt 250g butter in the milk pot, pour it into a bowl and let it stand for 2 hours. (Do not stir the whole process) Take the clarified butter from the upper layer for later use.

2. Put two egg yolks into a bowl and beat them with electric egg beater at low speed for about 3 minutes to make them thick and smooth.

Heat insulation gas: boil a pot of water and operate it with steam, so that the bottom of the basin does not touch the water, so as not to burn the egg yolk.

3. Add clarified butter to the bowl several times, each time 1 spoon. Continue to "isolate the gas" and beat with electric egg beater at low speed for about 6 minutes, and continue to stir until the oil is completely emulsified until the butter is definitely added. Add 2 spoonfuls of lemon juice, 2 spoonfuls of water and 1/4 spoonfuls of salt, and use an egg pump to pump "heat insulation gas" at a constant speed for 30 seconds.

Wave egg: Take a deep pot, add water for 8 minutes to boil, add a little salt and a few drops of white vinegar, turn off the fire, quickly stir a vortex in the water with chopsticks, put an egg in the middle of the pot (I use raw blue egg), cover and stew for 2 minutes and 40 seconds, and then take out the wave egg for later use.

Other ingredients: add 2 slices of bacon to the pan, fry with low fire until the surface changes color slightly, and then serve. Add 4-5 spinach and stir-fry until dark green. Turn the fire to medium heat, put in the half-cut English muffin and bake it.

Put English muffins, fried spinach, fried bacon, avocado slices and water eggs in turn into a plate, drizzle with Dutch sauce and sprinkle with black pepper to decorate.
