Method for make bean curd jiaozi

Now I will share my usual practice of making tofu balls as follows:

1. Cut a piece of tofu into small pieces, put it in a bowl, sprinkle a little salt, pour boiling water on the tofu, and scald the tofu, so as to remove the beany smell of tofu. Drain the scalded tofu and press it into a paste with a spoon.

2. Four horseshoes are cut into foam, a small piece of ginger is cut into foam, and four or five shrimps are chopped into mud.

Chop 3.200 grams of pork containing two parts of fat and eight parts of lean meat into foam.

4. Pour tofu foam, horseshoe foam, ginger foam and shrimp sauce into the meat sauce in turn, beat in an egg, add appropriate amount of salt, soy sauce and oil consumption to taste, and stir the meat sauce in the same direction.

5. Grease your hands to make meatballs, pinch a proper amount of meat stuffing in your hands, brush a plate of bottom oil, put the meatballs into a plate, boil the water and steam for 20 minutes. (You can also fry the prepared meatballs in the oil pan, or put them in water to cook. )

You can adjust the juice according to your taste. When steaming meatballs, don't pour out the juice steamed on the plate. You can use it to adjust the juice. Peel and cut tomatoes, stir-fry them in juice and pour them on tofu balls. You can also use a little soy sauce, oil consumption and starch to adjust the juice. If you eat spicy food, you can add some pepper or bean paste to adjust the juice. )
