Xinghua Village is a famous wine capital in China, located on the north side of Taifen Highway, at 15km north of Fenyang City and 90km away from Taiyuan, the provincial capital.
Fenjiu in Xinghua Village, Shanxi Province is famous for its clear and clean, pure fragrance and long sweetness, that is, color, fragrance and fragrance.

trace (back) to the source of sth
When the name of Fenjiu originated remains to be further verified, but as early as 1400 years ago, the name of Fenjiu already existed here.
Of course, 1400 years ago, there was no distilled liquor in China. "Fenjiu" and "Dry Brewing" recorded in historical materials are all yellow wine, and China liquor, including Fenjiu and other famous wines, evolved from yellow wine.
According to the Book of the Northern Qi Dynasty, Wu Chengdi Gao Zhan of the Northern Qi Dynasty said in a letter written by Jinyang to Xiaoyu, the king of Kangshu, Henan Province, "I drink two glasses of Fenjiu.
I suggest you go to Ye's house for a drink.
After the Song Dynasty, due to the progress of alchemy technology, China first invented distillation equipment.
1975 The steel cauldron unearthed in Qinglong County, Hebei Province proves that distilled liquor existed in China at least in the Song Dynasty.
Song "Beishan Wine Classic" records.
"Dry wine produced in Fenzhou in Tang Dynasty" and "Ganlu Hall in Fenzhou is the most famous in Song Dynasty" in the Wine List are all about Fenzhou.
Fenjiu is one of the famous wines in ancient times, which has been praised by scholars since the Tang Dynasty.
After the Ming and Qing Dynasties, the northern liquor developed rapidly and gradually replaced the production of yellow rice wine. At this time, Fenjiu in Xinghua Village is already distilled liquor, which is famous all over the world.
Starting from 19 16, Fenjiu won the first gold medal in Panama World Expo, and its reputation is even more competitive and famous.
Brewing technology
After drinking Fenjiu in Xinghua Village, the aftertaste is long, and the wine is strong but not * * *, which makes people feel happy.
Fenjiu has enjoyed a high reputation for thousands of years, which is inseparable from the purity and exquisite craftsmanship of water.
Where famous wines are produced, there must be good springs.
Xinghua Village has inexhaustible high-quality spring water, which gives Fenjiu endless vitality.
Paoma Shenquan and Gujing Spring have beautiful folklore, which is called "Shenquan".
In Fenjiu Qu, it is recorded that "there is a new well beside Shenming Pavilion, and the water is vaguely crab yellow", and the annotation says: "The well water in Shenming Pavilion is excellent and the wine is very heavy."
Mr. Fu Shan, a patriotic poet, calligrapher and physician in the late Ming Dynasty, once wrote four characters for Shen Mingting's ancient well, indicating that apricot flowers and Jing Quan are unique, and the wine brewed is as refreshing as flowers.
Brewing Fenjiu is a unique brewing process with "a handful of sorghum" in Jinzhong Plain as raw materials, barley and peas as saccharifying and fermenting agents, and adopting "cooking and secondary cleaning".
The wine is clear and transparent, fragrant, sweet and mellow, refreshing.
The savvy of winemakers plays a vital role in the brewing process, such as koji-making, fermentation and distillation, which are experienced skills.
For thousands of years, this skill has been passed down from generation to generation through word of mouth, and it has been continuously innovated and developed. It still plays an irreplaceable key role in today's Fenjiu brewing process.
1932 Mr. Fang, a famous expert in microbiology and fermentation in China, summed up the brewing technology of Fenjiu as "seven secrets", namely, "people must be refined, water must be sweet, koji must be timely, sorghum must be true, pottery must be clean, the altar must be wet, and fire must be prolonged"
Fenjiu is a model of Fen-flavor liquor and the originator of China liquor.
Many famous wines in China, such as Maotai, Luzhou Daqu, Xifeng and Shuanggou Daqu, have borrowed from the brewing technology of Fenjiu.
Inheriting meaning
Yangshao cultural site 6000 years ago was discovered in Xinghua Village, the birthplace of Fenjiu. Judging from the unearthed artifacts, there was wine-making activity at that time.
Fenyang still preserves the remains of brewing workshops, ancient wells, stone tablets, plaques and old streets in the Ming and Qing Dynasties, and the inheritance chain of traditional skills is still continuing. This historical inheritance has become a solid foundation for protecting Fenyang's traditional wine-making skills.
Fenjiu system has gradually grown in development, and a series of liquors such as Laobai Fenjiu, Zhuyeqing Liquor, Rose Fenjiu and White Fenjiu have been produced with Fenjiu as the mother liquor.
Now there are also "apricot matching" and "apricot blossom" in the wineries around Xinghua Village.
However, at present, the large-scale industrial production of Fenyang wine has brought great challenges to the inheritance of traditional manual brewing technology. At the same time, Fenyang still has the problems of water shortage, air pollution, sorghum and other raw materials shortage, which should be paid great attention to and timely measures should be taken to ensure the normal production of Fenyang liquor and the smooth inheritance of Fenyang liquor brewing technology.
The state attaches great importance to the protection of intangible cultural heritage. On May 20th, 2006, the wine-making skills of Xinghua Village were approved by the State Council to be included in the first batch of national intangible cultural heritage list.
