Why does quantum collapse as soon as it is observed?

The so-called "what the observer sees collapses" is actually a fallacy of folk science. "Seeing" requires photons to enter your eyes, and you can't see quantum at all. Quantum actually collapses not because it is observed, but because it obtains information. If you know programming and you understand quantum as an object, then "quantum collapse" is "instantiation of an object".
